I'm not a Cmake person, but I strongly suspect that CC=gcc-5 CXX=g++-5 will work. It's possible that "compiler: gcc-5" will work as well, instead of the current "compiler: gcc" at https://github.com/vinniefalco/NuDB/blob/master/.travis.yml#L36 but I've never tried that. Either way, the result will be CXX and CC being set. Their current default values are g++ and gcc, as can be seen at https://travis-ci.org/vinniefalco/NuDB/jobs/213555724#L354
